Let’s assemble our Easy Mexican Pizza!

One of the many things I love about this recipe is the versatility. It can be made with whole wheat tortillas, your favorite salsa, and the oh so many topping choices! Just add what you would normally want on your favorite taco! If you want to make this a heavier meal, you can add vegan ground crumbles to the top of the bean mixture and serve with some Mexican rice. I add jalapeños and crumbled chips for my husband, he’s a happy camper! The recipe is written as pictured, but don’t be afraid to get creative!
Start by prepping all the items first, since this all comes together fairly quickly. Pre-heat the oven and toast the tortillas for a couple minutes. Don’t forget to poke some holes in the tortillas using a fork, this keeps them from puffing up. Then prep the tomatoes, olives, green onions and cilantro. Mix the refried beans with a little water and heat in the microwave for a minute, this makes the beans easier to spread. Depending on what brand beans I’m using, I may add some Mexican spice blend to them, you can find a quick Mexican blend here: Homemade Mexican Spice Blend. Top a tortilla with the refried beans, add another tortilla, add the salsa and cheese then pop back into the oven, viola…done! Lastly, add the fresh toppings and your easy meal is ready!

Ingredients
- 4 flour tortillas, poke some holes with a fork
- 1 can vegetarian refried beans, add 2 tbsp water or salsa to thin
- 3/4 cup salsa or enchilada sauce
- 3/4 cup vegan cheese, shredded
- 1 tomato, diced
- 2 green onion sprigs, diced
- 1/2 cup sliced black olives
- dollop of vegan sour cream
- chopped cilantro-optional
Instructions
- Pre heat the oven to 400, bake the tortillas for 5 minutes.
- Place 2 to 3 heaping spoonfuls of beans on 1st tortilla-spreading evenly, stack the 2nd tortilla and top with salsa and cheese, pop back into the oven for 5 minutes.
- Top the pizzas with the remaining fresh ingredients and serve hot.
